Pop's Golden Fried Crappie With Lemon Wedge

This is a really simple and delicious recipe that requires few ingredients!  I asked my Fiancé  if she could come up with a quick batter with the ingredients we had sitting around.  She is a culinary arts major and has one heck of a knack for cooking fish.  

After we bit into the first pieces we knew we had struck gold, hints the name!  The batter is more toward the wet side and goes great on sandwiches if that’s the way you take it.  

Once we were full we took them over to a tough taste tester (my old man).  First bite we got the nod of approval and knew we had to add it to the list.

If your fish are already filleted you could be eating from start to finish within 40 minutes.

 

Things you’ll need:

Medium to large pan

Medium bowl

Plate with paper towel to absorb the grease

Spatula 

1lbs Filleted Crappie

 

Marinade: 

Blackened Seasoning (1 Tsp)

Extra Virgin Olive Oil (1/4 cup)

Lemon Juice (3 Tsp)

 

     Place crappie fillets into marinade and roll around until all fillets have absorbed for ten minutes.

 

Now fill a pan with your favorite cooking oil (we prefer extra virgin olive oil) high enough to cover your fillets and turn heat on medium high.

Flour (1 cup)

Cornstarch (1/2 cup)

Garlic Powder (1 tsp)

Salt (1 tsp)

Blackened Seasoning (1 tsp)

Black Pepper (1/2 tsp)

 

     Place all dry ingredients into bowl and stir.  Pull fillets out of marinade one at a time and drop them into breading.  Flip over, the fish does not have to be perfectly covered.  By now your oil should be nearing cooking temperature.  To test take a little of the breading stuck to your finger and drop it into the pan.  It will begin crisping indicating that it’s ready for the fish.

     Watch for the fish to turn a light golden brown color.  Flip the pieces over though the other side shouldn’t take much time at all to finish.  If you like your fish crispier than leave in until it browns more.

     Cut up a lemon and lightly squirt onto the fish to taste.
